Healthy-Ish Vegan S’mores Pudding

The Wooden Skillet, aka Erin Jensen, has been developing fun and healthy recipes for over 6 years, gathering a sizeable following thanks to her real-world recipes and advice.

And in the final weeks of winter, she’s hit us with the perfect winter treat in the form of these health-adjacent s’mores puddings. For the Aussie’s in the back, s’mores are a heavenly campsite treats commonly found around campfires in North America, enjoyed presumably over shared tales of grizzly bear sitings and to the sweet aroma of pine trees. Less presumably, they consist of toasted marshmallows and chocolate sandwiched between two biscuits. Drool.

Thankfully, Jensen has removed the majority of sin to make this treat even more heavenly.

“This S’Mores Pudding is perfectly sweet and the combination of your classic s’mores flavours! So easy and SO good!” says Jensen.

Ingredients

8 medjool dates, pitted and chopped

2 tablespoons creamy almond butter

½ cup Califia Farms Oat Barista Blend

3 tablespoons cocoa powder

2 plain vegan biscuits

2 handfuls vegan marshmallows

Method

  1. Add dates, almond butter, oat milk and cocoa to food processor. Blend until smooth, scraping the sides down as you go.
  2. Add additional Califia Farms Oat Barista Blend as needed, to reach desired consistency.
  3. Take two small jars and divide the crushed biscuits between the two. Then divide the pudding between the two and finally top with some marshmallows.
  4. Serve and enjoy!
